Ingredients for 4 people:
250 gr white celery
250 gr golden apples
70 gr shelled walnuts
150 gr vegan mayonnaise
100 gr soy yogurt
1 tablespoon agave syrup
Juice of one lemon
Cervia salt to taste
White pepper to taste

Wash the white celery and separate the stems from the leaves, then cut into pieces about 3 cm long.

Bring the previously salted water to a boil and blanch the celery for 2-3 minutes, then drain and pat dry with absorbent paper and set aside.

Wash the apple (without peeling it) and cut into rather large cubes, soak for 15 minutes in water and lemon juice to prevent it from blackening.

In the meantime, prepare the dressing sauce, combine the mayoveg, soy yogurt, a tablespoon of lemon juice, agave syrup, salt and pepper in a bowl, mix everything until you get a smooth and homogeneous sauce.

Take back the white celery and the drained apple and mix with the dressing obtained, add the chopped walnut kernels and decorate with a few parsley leaves.
