Freshly seared Pak-Choi is a favorite vegetarian side dish. We suggest it with ginger and sesame oil for a light but extremely tasty vegetable dish. Serve it with fish, meat or pilaf rice.

1 tablespoon extra virgin olive oil
2 cloves of garlic, crushed
1 inch of ginger, peeled and thinly julienned
450g Pak-Choi, quartered
2 tsp soy sauce
2 tablespoons sesame oil
1 teaspoon of sesame seeds

Heat the extra virgin olive oil in a sufficiently large pan over medium-high heat, add the garlic and ginger and cook until fragrant. Add the Pak-Choi, the soy sauce and 2 tablespoons of water, cover and cook for 1 minute then remove the lid and continue to cook, stirring occasionally until tender and all the liquid has evaporated. Transfer to a serving dish, drizzle with sesame oil and sprinkle with sesame seeds.
