PASTA WITH CHICORY AND ANCHOVIES

The quick and easy recipe for pasta with chicory, flavored with garlic, chilli and anchovies: very simple and inviting, suitable for any occasion.

Pasta with chicory is a tasty and light starter course inspired by a classic side dish typical of Roman cuisine: chicory sautéed with anchovies and chilli. Delicious and rich in taste: you can prepare it in a few minutes and serve it on any occasion, enriching it with flakes of Parmiggiano Reggiano cheese or with toasted breadcrumbs.

Ingredients for 4 people)

320 g of spaghetti;
500 g of Chicory Cimata;
4 anchovy fillets;
2 cloves of garlic;
1 chilli;
q.s. extra virgin olive oil
q.s. salt and pepper.
Instructions

Wash the Cimata Chicory, remove the outer leaves and slice them finely, then boil them in plenty of boiling salted water for about ten minutes.
Meanwhile, season a drizzle of oil in a pan with the whole garlic cloves and chilli. Add the anchovy fillets and wait for them to melt completely.
Drain the chicory and sauté them in a pan over high heat with the freshly prepared dressing. Cook the spaghetti “al dente” and toss with the chicory. Serve hot.
